John Smith Busker Organ Center Boards

I'm building the bellows assembly for the John Smith 20-pipe organ and
have a question about the center boards, top of bellows and bottom of
reservoir, pictured at top of page 16.  The plans call for two center
boards side by side.  Is there a reason why it can't be one center
board twice as wide?  Thanks for the help.
